Two Artisan Sisters Holiday Recipe
Today I thought I would post a favorite family holiday treat recipe for Pizzelles! We have made them for many years however the past few years we have had to modify the recipe to be wheat-free and dairy-free. The following is the original recipe, if any one is interested in the wheat-free dairy -free version let us know.
Basic Pizzelles are made with
3 eggs
1/2 cup butter, softened
1 tbs. vanilla extract
3/4 cup granulated sugar
1-1/2 tsp. baking powder
1-1/2 cups all-purpose flour
Beat eggs and add softened butter, vanilla and sugar beating until creamy. add baking powder to flour and beat flour mixture into egg mixture.
Bake on your pizzelle iron according to manufacturers directions
Variations can be made if you like -
Coffee liqueur can be added in place of the vanilla , add 2 tbs. instant coffee grounds. Delicious!
Mint - replace vanilla with 2 tbs mint or peppermint extract and can add 1/4 cup mini-chocolate chips for a delicious mint-chocolate chip combination.
